Quick & Easy Homemade Granola

Granola is one of my favorite items to make from scratch. I’ve never been able to find a granola in the stores I enjoy. Commercial brands are either overly sweet or include too many additives and carbohydrates. Years ago, a friend shared her homemade granola recipe with me. I’ve tweaked it along the way to create my own version. This delicious quick and easy homemade granola recipe makes a huge batch, perfect to share with friends and family.

During a chaotic weekday morning, a healthy breakfast is sometimes hard to come by. In the past, I’ve skipped it all together or merely eaten a bar on the way to work or once I got to my desk. About a year ago, I remembered this recipe and decided to start making batches so I would have something healthy and delicious to eat throughout the week.

Furthermore, I’m currently training for a race and this type of dish offers significant energy and nutrition during peak times of fitness. Below is the recipe. It’s truly very simple to make and also a fun recipe to bake with kids. Even the youngest of children can help measure, pour and mix.

Quick & Easy Homemade Granola

Ingredients

  • 4 cups old fashioned rolled oats
  • 2 cups unsweetened shredded coconut
  • 2 cups sliced almonds
  • 1 cup unsalted sunflower seeds
  • 3/4 cup olive oil (I use a little less)
  • 1/2 cup local honey

Instructions

  1. Pre-heat oven to 350 degrees
  2. Stir together dry ingredients, set aside
  3. Whisk together olive oil and honey
  4. Mix everything together until dry ingredients are coated with wet mixture
  5. Pour onto a baking sheet (I lightly grease the baking sheet by putting a small amt. of oil on a paper towel and rubbing down the pan)
  6. Cook for a total of 25-30 minutes, depending on the heat of your oven (stir every 10 min.)
  7. Let granola cool completely, store in Mason jars or some other type of tightly-sealed container

Around the holidays, I packaged  granola and gave as gifts. I also sometimes take it to work to share with co-workers. Once your granola cools, sprinkle it on a little yogurt, top with fresh fruit and enjoy!

How can it be that my boys are already twelve and nine? When I created this blog, Case was only five months old and now he’s nine! Time really does fly at a bizarrely fast rate. Nothing brings me greater joy than being mom to my two boys. Brooks and Case are three […]

  • Here’s to 2021 and being unapologetically me January 1, 2021
This morning I wrote Jan. 1, 2021 in my journal. And man, that felt good. I know that a new year doesn’t make last year disappear and in fact, I don’t want 2020 to disappear. It was scrappy and tough and confusing and overwhelming. But I’ve learned that it’s in the mire when we […]

  • A hard anniversary August 14, 2020
Anniversaries are supposed to be a time for celebration and excitement. Except when it’s an anniversary of the death of a loved one. With that type, the day looms ahead and then when it arrives, it feels heavy. Today is the anniversary of my mom’s passing. I haven’t written on my blog in entirely too […]

  • The Day After Mother’s Day May 11, 2020
Sometimes the words are too buried to write. Yesterday when I woke up on Mother’s Day, I thought about writing a blog post. I even opened my computer and stared at the blank screen for a moment, but then I closed my laptop and began reading. I cozied down in bed and enjoyed a good […]

  • 10 Things to Smile About: March 2020 April 5, 2020
Though it feels like a dark cloud is hanging over Earth right now, I was determined to find 10 things to smile about during the month of March, which I think we all can agree felt like a long and bewildering month. This list is much different than previous “10 Things” lists, which often include […]
