This black bean and corn salsa is one of my all-time favorite recipes. It is so very simple and always a hit with party goers. Anytime I have a get together with friends or colleagues, I make this dish. In fact, when I was teaching full-time, it was requested whenever we had a pot-luck or appetizer party. This is a great dish for Labor Day, Memorial Day or any get-to-together. Family and friends will enjoy snacking on it while grilling burgers outside or watching a big game indoors. This salsa is excellent to eat on chips, but you can also eat on a salad or as a relish on a burger. Enjoy!
The ingredients are extremely healthy so you don’t have to feel bad about chowing down on this. Also, if you or someone in your family needs or wants to eat a gluten-free diet, this black bean and corn salsa is naturally gluten-free, so no worries there! The best way to make this recipe is with fresh corn you cut off the cob, but if you can find fresh corn or you don’t have the time to cut it off, canned corn works just fine, just try your best to find cans with a BPA-free lining. Trader Joe’s, Eden Organics and others make their cans without BPA in the lining.
Ingredients
- 4 cups fresh corn cut off the cob or 2 cans whole kernel corn
- 2 cans of black beans
- 1/3 cup olive oil
- 1/3 cup red wine vinegar
- 1 large bunch of green onions
- 1 large red pepper
- 1 tsp. cumin
- 1/4 tsp. sea salt
- Dash of pepper
Instructions
- Drain and rinse all black beans and corn
- Wash and chop green onions about midway up the stalk
- Wash and finely chop the red pepper
- Mix all of the above ingredients with the oil, vinegar, cumin, salt and pepper
- Stir well
- Let dish chill in the refrigerator for at least six hours for optimal flavor
- Serve with tortilla chips
